Freeze-drying food safety basics
- Freeze-drying does not kill bacteria. It keeps microorganisms dormant, and they can become active again when moisture returns — during rehydration or if storage lets moisture in. [Utah State University Extension, May 2026]
- Cook meat and eggs fully, either before freeze-drying or after rehydrating. [USU Extension]
- High-fat foods (mayonnaise is the example given) don't freeze-dry well and can become unsafe. [USU Extension] Very sugary foods, honey, peanut butter, chocolate and oils are also listed as poor candidates. [UC Master Food Preserver presentation, Aug 2025]
- Fruits, vegetables, cooked meats, grains and beans give the best results. [USU Extension]
- Cut food into small, even pieces, pre-freeze it, keep surfaces clean, dry completely and package right away so it doesn't pick up moisture. [USU Extension]
- For storage, keep out oxygen, light and moisture. [UC Master Food Preserver presentation]
- Shelf-life figures such as "25 years" are manufacturer claims. Store well and check food before eating.
